- 2 large eggs
- 1/2 teaspoon salt

Instructions:
Prepare the Dough:
- On a clean surface or in a large mixing bowl, pour the flour and make a well in the center.
- Crack the eggs into the well and add the salt.
- Using a fork or your fingers, gradually incorporate the flour into the eggs until a dough starts to form.
Knead the Dough:
- Once the dough comes together, knead it for about 5-10 minutes until it becomes smooth and elastic. You can sprinkle a little flour on the surface to prevent sticking if necessary.
- If the dough feels too dry and crumbly, you can add a little water, a teaspoon at a time, until the dough reaches the desired consistency.
Rest the Dough:
- Once kneaded, shape the dough into a ball and wrap it in plastic wrap or cover it with a clean kitchen towel.
- Let the dough rest at room temperature for about 30 minutes to 1 hour. This allows the gluten to relax and makes the dough easier to roll out.
Roll Out the Pasta:
- After resting, unwrap the dough and cut it into smaller portions.
- Using a rolling pin or pasta machine, roll out each portion of dough into thin sheets, about 1/16 to 1/8 inch thick.
- If using a pasta machine, gradually decrease the thickness settings as you roll out the dough.
Cut the Pasta:
- Once the pasta sheets are rolled out, you can cut them into desired shapes, such as fettuccine, tagliatelle, or pappardelle.
- If making filled pasta like ravioli or tortellini, cut the dough into squares or circles, fill them, and seal the edges.
Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Carefully add the fresh pasta to the boiling water and cook for 2-3 minutes, or until al dente.
- Fresh pasta cooks much quicker than dried pasta, so keep an eye on it to avoid overcooking.
Serve:
- Once cooked, drain the pasta and serve immediately with your favorite sauce, such as marinara, alfredo, pesto, or olive oil and garlic.
