How To Make Delicious Homemade Egg Pasta

How To Make Delicious Homemade Egg Pasta

  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 2 large eggs
  • 1/2 teaspoon salt
  • Water (if needed)

Prepare the Dough:

  • On a clean surface or in a large mixing bowl, pour the flour and make a well in the center.
  • Crack the eggs into the well and add the salt.
  • Using a fork or your fingers, gradually incorporate the flour into the eggs until a dough starts to form.

Knead the Dough:

  • Once the dough comes together, knead it for about 5-10 minutes until it becomes smooth and elastic. You can sprinkle a little flour on the surface to prevent sticking if necessary.
  • If the dough feels too dry and crumbly, you can add a little water, a teaspoon at a time, until the dough reaches the desired consistency.

Rest the Dough:

  • Once kneaded, shape the dough into a ball and wrap it in plastic wrap or cover it with a clean kitchen towel.
  • Let the dough rest at room temperature for about 30 minutes to 1 hour. This allows the gluten to relax and makes the dough easier to roll out.

Roll Out the Pasta:

  • After resting, unwrap the dough and cut it into smaller portions.
  • Using a rolling pin or pasta machine, roll out each portion of dough into thin sheets, about 1/16 to 1/8 inch thick.
  • If using a pasta machine, gradually decrease the thickness settings as you roll out the dough.

Cut the Pasta:

  • Once the pasta sheets are rolled out, you can cut them into desired shapes, such as fettuccine, tagliatelle, or pappardelle.
  • If making filled pasta like ravioli or tortellini, cut the dough into squares or circles, fill them, and seal the edges.

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Carefully add the fresh pasta to the boiling water and cook for 2-3 minutes, or until al dente.
  • Fresh pasta cooks much quicker than dried pasta, so keep an eye on it to avoid overcooking.

  • Once cooked, drain the pasta and serve immediately with your favorite sauce, such as marinara, alfredo, pesto, or olive oil and garlic.

Enjoy your homemade egg pasta! It's delicious, versatile, and perfect for any pasta dish.
